Adobong Manok Recipe or Filipino Chicken Adobo recipe is one of the easiest Filipino dishes to cook. It is one of the most popular and traditional Filipino recipes and is often regarded as a national dish. Adobo is the Spanish word for marinade, sauce or seasoning. The Philippines, being colonized by Spanish for about 400 years, we Filipinos adopted this dish as our own. Every Filipino, young and old, surely know this dish and have tasted a variety or two.
We have potato and egg added in this Chicken Adobo Recipe as ingredients as an option. This is to add more diversity rather than just eating plain chicken. You may cook it without the added ingredients of course without losing its distinct taste.
The good thing about this dish is that you do not need cooking experience to be able to prepare it. This recipe for Adobong Manok is so simple to cook just like the Bicol Express recipe we have in our previous post. Just follow the easy steps below and you will surely come up with a delicious meal.

- 1 kilo Chicken cut into serving pieces
- 1 cup white vinegar
- 1/2 cup soy sauce
- 1 piece onion medium, thinly sliced
- 4-5 cloves of garlic crushed
- 2-3 pieces bay leaf
- 6-8 pcs black peppercorn
- 1 tsp salt
- 1 tsp sugar
- 1 cup water
- 1/4 cup oil
- 1 piece medium potato cut into cubes (optional)
- 3-4 pieces eggs bring to boil - unshell (optional)
Heat the oil in a pan and fry garlic till brown.
Add chicken pieces, water, vinegar, soy sauce, onion, bay leaf, black peppercorns, and salt. Bring to boil and simmer for 15 minutes.
Remove chicken and let cool. Separate.
Heat sauce, add potato and sugar and reduce liquid. Separate.
Fry chicken pieces until brown and add the sauce and eggs into it. Mix well.
Add salt to taste.
Serve with rice.
