The word Biryani comes from the words ‘biriyani’ or ‘biriyankardan’. It is a Persian word that means to fry or to roast. The word is Farsi, but Biryani was invented in India. Biryani is not Persian; pulao came from Persia. Pulao was developed in India and evolved into biryani.
One can easily prepare paneer pulao (Paneer Rice) or paneer biryani at home, as it is very easy and delicious. We can serve paneer biryani with a simple vegetable salad.

Ingredients (for Paneer Rice Recipe):
For Biryani Masala
- Paneer – 20 cubes
- Bay leaves – Few
- Black Cardamom – 2nos
- Oil – 1 cup
- Cumin – 2tsp
- Cinnamon – 1no
- Cardamom – 6-7nos
- Onion sliced – 2½ cups
- Turmeric – 1tsp
- Chilli powder – 1tbsp
- Coriander powder – 2tbsp
- Garlic paste – 2tbsp
- Ginger paste – 1tbsp
- Curd – ½ cup
- Tomato purée (fresh) – 1cup
- KasooriMethi (Fenugreek seeds) – 2tsp
- Green chili – 2nos
- Water – 3cups
- Salt – to taste
Ingredients for Rice
- Basmati rice – 2cups
- Green chilies – 2nos
- Bayleaf – 1no
- Water – 3lts
- Cardamom – 4-5nos
- Kewra water – 2tbsp
- Rose water – 2tbsp
- Salt – 3tbsp
Assembling
- Garam Masala – ½ tsp
- Coriander chopped – a handful
- Mint leaves – a handful
- Ghee – 2tbsp
- Atta (flour) – for sealing
There are three parts to making Paneer Rice.
- Marinate or cook the paneer separately, in a pan.
- Make a Jhol or Masala.
- Cook the rice and then assemble the biryani
Steps to prepare Paneer Rice or Paneer Biryani
Step – 1 For Biryani Masala or Jhol
- Heat the oil in a pan and add the spices.
- When they begin to crackle, add the onions and cook until their color turns light brown. (Paneer Rice Recipe)
- At this point, stir in the turmeric, chili powder, coriander powder, ginger paste, and garlic paste. (Paneer Rice Recipe)
- Cook for 2 minutes before adding the whisked curd. Increase the heat to high-medium and continue stirring the curd until it comes boils.
- Reduce the curd to the point where the masala begins to leave oil. (Paneer Rice Recipe)
- Add fresh tomato puree, green chilies, salt, and KasooriMethi (Fenugreek) leaves at this point, and cook this masala until the oil returns to the surface.
- Pour in the water, mix, and bring to a boil. (Paneer Rice Recipe)
- Adjust the seasoning with salt, if necessary, after adding the rose water and kewra water. (Paneer Rice Recipe)
Now our Biryani Masala or Biryani Jhol is done. So, keep it aside for a while.
Step – 2 For Paneer
- Place the paneer cubes on a plate and sprinkle with salt, turmeric, and chili powder.
- Do not attempt mixing because the paneer may break. Allow it to remain in the same way for 15 minutes instead. (Paneer Rice Recipe)
- Heat oil in a hot pan and add paneer cubes. Avoid mixing or stirring since the paneer may break. Shake the pan instead to move the paneer around.
- When the paneer has turned a brown color on the bottom, turn it over using a thin flat spoon.
- Cook until the paneer is browned.
- Transfer paneer cubes to a dish and set aside.
Step – 3 For Biryani Rice
- Wash the rice for 30 minutes, and then soak it.
- Take a deep pan and pour 3 liters of water into it. Boil it along with salt, bay leaf, green chili, cardamom, kewra water, and rose water. (Paneer Rice Recipe)
- Boil all these for 5 minutes, and then skim off the spices.
- Now take out the rice that we have washed, remove all the water, and put the rice into the boiling water.
- Cook the rice until it is 50% cooked, then remove it from the heat and instantly strain it.
Don’t throw out the water; it will be used later in the recipe.
Step – 4 Assembling Paneer Biryani or Paneer Rice
- Now we will heat the biryani masala again and add paneer to it.
- Give it a quick boil and ensure that it has enough moisture and is not dry.
- Now turn the heat off and sprinkle on top garam masala, mint, and coriander.
- Arrange half-cooked rice on it and pour some ghee and a cup of water which we have kept aside after boiling the rice.
- When we add water, we will keep in mind the moisture of the Jhol below and how much the rice is cooked.
- Now seal it with a tight-fitting lid; you may also use any dough to seal the lid.
- Cook the biryani for 2 minutes on high heat, then reduce to moderate heat and continue to cook for 10 minutes.
- Remove from the heat and set aside for another 10–15 minutes.
